Bordeaux Blend 2014

This wine displays an intense, rich plum, ruby colour. With an equal intensity on the nose, showing rich dark berries and mocha notes. Cigar box and pencil shavings shine through. On the palate this wine displays a rich integrated mouthfeel, with sweeter dark berry flavours, cedar notes and a fine tannic structure. A soft velvety finish lingers ads to the complexity and refinement. Careful use of oak helps add to the allure of the wine.

The wine is well paired with hearty meals showing bold flavours. Red meats, intense sauces and complex dishes.

In The Cellar

From the vineyard to the cellar the grapes go through various selection processes to ensure we get only the best fruit. Hand harvested into small lug boxes and transported to the cellar. After cold soaking, fermentation started in tank and then malolactic fermentation takes place in 300 litre French oak barrels, allowing integration of the complicated tannic structure and having a stabilizing effect on the colour. The wines were then individually placed in a combination of French oak, around 70% new French oak for 18 months. We then did a special selection blend of Cabernet Sauvignon and Cabernet Franc, which was then placed into 100% new French oak for a further 5 months, to help develop the characters we were looking for in the blend.
