Sauvignon Blanc 2018

This unique Sauvignon Blanc is a reflection of the site and soils in which the vineyards grow. South facing 16 year old vineyards sitting 175m above sea level, in deep Hutton and Clovelly soils. This lightly oaked Sauvignon Blanc, displays mineralitylity with well balanced natural acids. Combining herbaceous and integrated tropical fruits, such as lime zest, green apple and pineapple. With a elegant freshness and a long lasting and crisp finish. This wine is perfect to enjoy with, fresh oysters, grilled fish, asian inspired dishes and sushi.

In The Cellar

From the vineyard to the cellar the grapes go through various selection processes to ensure we get only the best fruit. Hand harvested into small lug boxes and transported to the cellar. Cold maceration on the skins for 8 hours prior to pressing. We then barrel ferment 5% of the wine in new 400L French oak barrels, for 6 months on gross lees. Then 95% is fermented in stainless steel tanks. We allow extended lees contact, which we believe assists with mouth feel and longevity in the wine. With the tank fermentation we allow 30 days on the gross lees and a further 3 months on the fine lees.
